Depends on what you need doing to them. If the colour is buggared then strip them down (take the freewheel off before you remove the spokes) send them to Custom Colour Annodising for the old anno to be stripped and a new anno colour applied.
Rebuild using Stidds "how to guide" in the tech and resto section and then take to your lobacl bike shop for a final true and dish check

Strip and re-grease the hubs too, maybe get those re-finished if needed if not just a good wipe and clean
