I've had similar happen before but generally if it's an overseas bidder ebay allows you to amend the invoice before sending it to the buyer.  On occasions when I haven't been able to amend the final amount (eg, having previously agreed free p&p with buy-it-now via ebay messages with a buyer), then I've messaged the buyer in question and refunded the p&p amount immediately.  I guess you could do similar - ask your buyer to pay the invoice amount and then a further separate postage cost - I know it's a trust thing though and if it goes pear-shaped ebay won't really help.

Just write the new postage amount into the invoice, dont click the recalculate link, then preview the invoice.
It should have the new total price, then click send invoice, job done.
